Resep Kukis Bobengka Panggang Khas Manado yang Manis dan Legit

Sekilas tampak seperti brownies, kue basah tradisional bernama bobengka ini memiliki cita rasa yang manis, bertekstur lembut dengan aroma kelapa serta kayu manis yang kuat. Kukis bobengka adalah bagian yang tak terpisahkan dari sejarah dan budaya juga menjadi simbol identitas kuliner Manado. Lantas, bagaimana proses pembuatannya? Berikut ini resep kukis bobengka yang manis dan legit.

Bahan-bahan :

  • 400 gr daging kelapa muda, parut kasar atau potong sesuai selera
  • 200 ml air kelapa muda
  • 250 gr gula merah
  • 100 gr gula pasir
  • 325 gr tepung ketan
  • 1 sdt kayu manis bubuk
  • 100 gr kenari, cincang kasar
  • Daun pisang untuk alas loyang, olesi minyak goreng secukupnya (opsional)

Cara membuat:

  • Rebus air kelapa muda, gula merah dan gula pasir hingga mendidih, dinginkan lalu saring
  • Ayak tepung ketan dan kayu manis lalu campukan bertahap kenari dan potongan daging kelapa muda hingga tercampur merata
  • Tuang air kelapa dan gula merah ke dalam adonan tepung, aduk hingga tercampur merata
  • Alasi Loyang dengan daun pisang yang sudah diolesi minyak kemudian tuang adonan ke dalam loyang
  • Taburi adonan dengan toping kenari cincang
  • Panggang dengan oven menggunakan api bawah di suhu 160° selama 45 menit atau cek berkala hingga matang
